Today’s Pie: ‘presidential’ cherry

Crust was perfect; the blend of light, flaky and tender to which we’ve grown accustomed. It was also ‘shiny’; the Pie Master had washed it in egg white to give it a glazed appearance. Also of note was the prodigious size of the crenelated ridge; discernibly greater than normal, which was very pleasant at the end of the pie, as it neutralized the cumulative tartness accumulated through the consumption.

The cherries were Montmorency, ’09. They aged well.
The fruit was, as previously mentioned, tart– very tart… but in a nice, way; sort of like having your tongue stabbed with little cherry daggers. The meat of the fruit was firm, yielding a very pleasant mouth-feel.
The appearance of the pie was noteworthy, in that the Pie Master crafted little dough hatchets for the crust, arranged amongst the cherry-shaped cut-outs. Edible works of art.
This was perfect pie.
