Today’s pie: Strawberry-whipped cream

The crust was drunk, and exhibited all the qualities a drunk crust ought; light, flaky, and uninhibited.

The strawberries were from Florida, and most were on the ripe-ish side. There were one or two firm berries that could have stood a couple more days on the beach, but the bulk of the product had a good flavor and a suitable degree of tartness. The interstitial medium had strawberry-flavored gelatin, which helped carry the weaker of the berries.
The whipped cream was fortified with creamcheese, and was, for me, the highlight of the pie. I could have eaten an entire dish of the whipped topping, and been not the least bit unhappy.
