Today’s pie: bluesberry (á la mode)

New and improved crust– now with vodka!
The reason for this is that the alcohol has less water content, therefore less gluten is created, resulting in a (theoretically) more tender, more flaky crust. The flaky was definitely there. However, the ‘tenderness’ was a little on the firm side. That is to say, it was a fine, tasty, and perfectly serviceable crust; but I’ve seen the Pie Master produce better. I’m going to chalk this up to a process that simply needs refinement.

The filling was crafted with frozen bluesberries that came from the farm, and they suffered the cryogenic winter pretty well. Flavor was retained, as well as piquancy, and as always, the Pie Master achieved the perfect balance between the nature of the fruit and the unifying medium of sugar-flower-n’whatnot.
This was perfect pie.
