Today’s pie: apple

Crust was, for reasons unknown to me, exceptional.  It had a rich flavor that stimulated the palate, and the texture of the pastry-bit was perfect, achieving that holy-grail of flaky, yet tender.  Noms
The only other circumstance of note was that this was a pie not constrained by the usual compliment of inhibitions; that is, the pie went around being all topless.

The filling was composed of winesap (mostly) and jonagold (the remainder) apples, which gave the pie a very nice flavor.  As expected, the Pie Master achieved a perfect balance in the applied ingredients, resulting in a ‘golden ratio’ of flavors.
This was perfect pie.
