Today’s Pie: citrus cheese

The crust was a splendid affair of light, finely layered crispy goodness. The very recollection of a broken bit of crenelation pilfered from a passing pie plate continues to make my mouth water.

The cheese base was the standard recipe; creamy and mildly sweet with a pleasant enough density to give it structural integrity and a good mouth-feel, but yielding enough to integrate nicely with the fruit topping with each bite.
The fruit was a blend of Del Monte® citrus (grapefruit & orange), supplemented by farm-sourced lime and tangerine segments; the entire arrangement a symphony of tastes. It’s the lime that really sets it off, though.
This was perfect pie.
