Todays Pie: apple

The crust was another in a long run of perfect crusts… a character and flavor that would stand as a treat on its own.
The only thing it couldn’t do was stand up to the pie mangler’s ministrations (that’s not a fault of the crust, but rather ta testament to the mangler’s proficiency*)

I’d like to state at this point that the fact that ‘apple’ is my favorite pie in no way compromises this review…

The filling was composed of Transparent Apples, artfully arranged by Pie Master’s wife.
The apples were tender, but not mushy, and had a wonderfully tangy, sweet flavor (according to the Pie Master, this is a result them being picked prior to becoming ripe, when the flavor is still at its peak).  The viscous component of the filling was in perfect proportion to the aggregate, and complemented the apples nicely.  As was noted by my colleagues, the fact that this pie was ‘topless’ (no lattice top) also allowed for a perfect pie:crust ratio.
This was perfect pie.

* and quite frankly, no one would want to eat a crust that could stand to such rigors.
